Chocolate Peanut Butter No Bake Cookie Recipe

This is the perfect starter recipe for no bake cookies. What is better than chocolate and peanut butter together? Yummy! This simple no bake cookie recipe is easy and fun. The key to creamy chocolate peanut butter no bake cookies is to make sure the sugar mixture is boiled for a minute.

Prep Time: 15 minutes

Ingredients:

  • 2 cups sugar
  • 1/2 cup milk
  • 1/2 cup cocoa
  • pinch salt
  • 1/2 cup butter
  • 1 cup peanut butter
  • 3 cups quick-cooking oatmeal

Preparation:
Use a large saucepan to combine sugar, milk, cocoa, salt, and butter. Stir well. Bring the mixture to a boil and then cover saucepan for about a half of a minute. Mix well and then bring it to a boil for 1 minute. Once the mixture cannot be stirred down, then remove from heat and add in peanut butter, stirring until smooth. Add oatmeal and mix well. Use quick-cooking oatmeal only. The success of this recipe hangs on this point. Do not use instant or regular oatmeal.

Let the mixture stand for 10 minutes, stirring occasionally to let the oatmeal absorb some of the liquid.

Drop mixture by spoonfuls onto waxed paper or parchment lined baking sheets. After the drop no bake cookies cool, reshape them into a ball shape. Let cool completely; store at room temperature.

Variations: Spruce up this basic recipe by substituting 1 cup of flaked coconut for 1 cup of the oatmeal. Add some chopped nuts to the recipe for crunch. Or throw in a handful of milk chocolate chips after the mixture has cooled slightly.

This delicious no bake cookie recipe can also be made into bars by pressing the mixture into a 9″ square pan that has been lightly greased. Cool and cut into squares.
